We are in full swing in our egg collecting season over here. The hens are laying consistently, so using them daily has become a necessity.
Omelettes are a favorite in our house during this season, but after making about a million of them standing over a hot pan flipping and filling, I opted to swap out how we make them for our family.
One of my favorite things about making them like this is the ability to swap out ingredients so easily. One kid only likes cheese. One likes cheese and ham. One likes sausage and bell peppers. All are quick and simple to put together.
The main thing you’ll want to remember about these is to layer the eggs on last. In the picture, it appears like the cheese is on top- and it is! As these cook, the cheese and ham migrate through the egg and helps create a lovely golden cheese crust on the top!
Make sure your muffin pan is well greased as well, if you want them to actually come out of the pan! (I speak from experience here…)
My kids- even my littles, love to make their own, and this is a great recipe to let them practice their cooking skills!
