Hot Cocoa Pudding | A Warming Winter Treat

This is about to get controversial. Please forgive me if you aren’t on my side of this, as I have recently found out not everyone agrees with this sentiment.

The best pudding is hot pudding.

Warm pudding is something I grew up loving, so imagine my shock when my husband looked at me with pity and disgust when I presented him with a steaming bowl of banana…goo…

Okay, I guess I can kinda see it. But not really.

Especially in the winter when it’s chilly outside and the blankets are coving the couches and the fire is lighting the room, a toasty cup of chocolate pudding really does just warm you from the inside out. If you’ve never had it, I urge you to give it a shot as the temps are lower right now! It’s such a lovely treat!

We have been really enjoying this one, specifically. Warm hot cocoa pudding takes everything we love about a cup of hot chocolate and makes it edible. The rich chocolate and melty marshmallows…so rich and delicious!

Put away that box of pudding mix because homemade pudding is so simple, and odds are pretty great that you already have everything for it!

What You Need

3/4 cup sugar
1/4 cup corn starch
1/3 cup cocoa powder (not hot chocolate mix)
1/4 tsp salt
2 cups milk
1 tsp vanilla
Mini marshmallows

What You Do

In a medium sauce pan, mix all your dry ingredients together. Add in your milk and mix to combined. Over a low to medium heat, start to bring your pudding up in temperature slowly, stirring consistently. At first, if you aren’t constantly stirring, you’ll be fine, but once it starts to get thickened some, it will easily scald and burn the milk at the bottom.

Stir and heat for about 10 minutes until mixture thickens to the point that it coats the back of a spoon. Remove it from the heat, mix in the vanilla, and separate into individual dishes, topping with mini marshmallows. It’s very simple but very delicious!

If you want to pull the calories down a bit, you can feel free to use 2% or skim milk, but it will sacrifice some of the richness!

Ingredients
  

  • 3/4 cup sugar

  • 1/3 cup cocoa
  • 1/4 tsp salt
  • 2 cups whole milk
  • 1 tsp vanilla extract
  • mini marshmallows

Instructions
 

  • Combine dry ingredients
  • Add milk and mix to combine
  • Cook over low to medium temperature, stirring constantly until thickened
  • Add in vanilla and mix well
  • Top with mini marshmallows, serve warm
