Roasted Marinara Sauce

This marinara has a deeper flavor from roasting but is, by far, the simplest method to make a delicious, quick sauce for a summertime pasta!

Cook Time 45 minutes

Ingredients
  

  • 3 lbs fresh tomatoes
  • 1 whole onion
  • 10-15 garlic cloves
  • 1/4 cup olive oil
  • 1 tbsp fresh (or 1 tsp dried) oregano
  • salt to taste

Instructions
 

  • Preheat your oven to 425
  • Remove the tops of the tomatoes so only the edible parts are left and place on baking dish or sheet pan
  • Quarter the onion and place next to the tomatoes
  • Create a foil pouch and put in garlic cloves
  • Drizzle everything with olive oil and sprinkle salt to taste
  • Close up the garlic pouch
  • Sprinkle on oregano
  • Roast at 425 for 30-45 minutes, allowing a bit of a char on vegetable. This adds flavor.
  • Once properly roasted, add all ingredients to a blender and blend until smooth
  • Serve over pasta for an amazing summertime flavor!

Notes

I prefer to use paste tomato varieties to make this. I also use whole, peeled garlic cloves.
