Ingredients
3
lbs
fresh tomatoes
1
whole
onion
10-15
garlic cloves
1/4
cup
olive oil
1
tbsp
fresh (or 1 tsp dried) oregano
salt to taste
Instructions
Preheat your oven to 425
Remove the tops of the tomatoes so only the edible parts are left and place on baking dish or sheet pan
Quarter the onion and place next to the tomatoes
Create a foil pouch and put in garlic cloves
Drizzle everything with olive oil and sprinkle salt to taste
Close up the garlic pouch
Sprinkle on oregano
Roast at 425 for 30-45 minutes, allowing a bit of a char on vegetable. This adds flavor.
Once properly roasted, add all ingredients to a blender and blend until smooth
Serve over pasta for an amazing summertime flavor!
Notes
I prefer to use paste tomato varieties to make this. I also use whole, peeled garlic cloves.
