As the daily high temperatures begin to creep up, I find myself wanting to turn my oven on less and less. The problem with that for me, however, is there is almost never a day that goes by that I don’t want to get my hands into some bread dough.
Dough and Dirt. I think of them as my own personal form of therapy.
Here’s a quick preview of the recipe:
2 cups warm water
2 tbsp yeast
2 tbsp sugar
6 cups flour
1 tbsp kosher salt
6 tbsp softened butter

My go-to for a summer bread is this grilled flatbread recipe. It is fluffy and chewy and perfect for a gyro or a wrap or slathered with melted butter and jam for a tea time snack.
This recipe starts with warm water. I just use the warmest I can get from the tap. To that, I add the sugar and yeast.

If you’re not using your yeast super often, you’ll want to let this sit for a bit to foam up. If it foams, you know your yeast is alive and working.
On top of the yeasty water, add in 6 cups of flour and a tablespoon of kosher salt.

With the hook attachment, you’ll knead this until a dry dough forms. It won’t be completely mixed together, but that’s okay. Now is when you want to add in your softened butter. It’s important at this point to use softened butter, not melted. It does make a difference in the final product.

From here, your mixer will do all the work. Knead it all together for about 6 minutes, until the dough is nice and elastic. Cover it and let it rise until it doubles in size- about an hour.

Once the dough has doubled, split it up into twelve equal portions. This dough does not require a second rise because we want it to be flat when we grill it up. I love that. Anything to get my tummy full of bread faster is a win for me.

You’re simply going to roll these out and pop them on a hot grill. I cook them on a medium low until they bubble some, give them a flip, and brown both sides.

That’s it. That’s all it takes for the most delicious summer time no oven needed useful for so many recipes bread! This is by far the bread recipe we make the most in our home, and I hope it becomes a staple in yours!
